Kitchen Manager

Department: Operations

Reports to: Corporate Kitchen Manager, DOO

Job Description:

Candidate must be currently validated in (or willing to validate in) the following:

* BOH opening & closing duties
* DOH standards
* General food preparation procedures
* All BOH positions: Prep, Grill, Sandwich, Rice/Noodle, Expo
* Safety and Security Procedures

Have NYC Food Handler's License

Working recipe knowledge of our food and beverage presentations and storage procedures

Trained on guest service and complaint resolution

Possess basic to advanced culinary background and knowledge

Formal culinary training preferred

Able to speak publicly, teach classes

Overview of Responsibility:

The Kitchen Manager is responsible for ensuring consistency, efficiency and accuracy the kitchen by communicating and ensuring adherence to proper recipe, presentation and DOH food safety standards. The Kitchen Manager is responsible for guest and team member satisfaction in all food areas. The Kitchen Manager is expected to be intimately familiar with all Num Pang systems and procedures in addition to all NYC DOH and Department of Labor regulations and guidelines.


* Gain trust; develop and mentor BOH team members
* Assist in identifying potential in-store and NSO training team candidates
* Communicate regularly with Corporate KM and DO
* Check in with Manager & Corporate KM with regard to food quality, staffing and kitchen equipment
* Ensure BOH team members are practicing proper preparation, cooking and service techniques
* Hold vendors and commissary accountable to proper food specifications
* Meet and exceed forecasted food sales while maintaining budgeted cost of goods and labor
* Write and adjust BOH schedules weekly with consideration to all budgets and projections
* Interview potential BOH team members and submit to Manager & Corporate KM for final approval
* Work closely with new BOH team members during and after training to assess skill levels
* Consult with Corporate KM and DO in all BOH termination decisions
* Train or assist in training all new BOH team members
* Maintain a \"like new\" kitchen regarding cleanliness, organization and maintenance
* Monitor all kitchen equipment via maintenance schedule
* Notify Manger, Corporate KM and DO when maintenance or replacement of equipment is necessary
* Perform regular one-on-ones with key BOH team members


HS diploma or GED preferred

Approximately 6 years of restaurant experience

Approximately 2 years of Kitchen Management experience Full service or fast casual accepted

Bi-lingual English-Spanish required

NYC Food Handlers License is a must
